If you don’t have puntarelle, use another chicory such as radicchio or endive. Chicory are bitter-leafed vegetables, which is why it is important to use citrus to soften and sweeten them in this recipe.

Insalata di Puntarelle

Ingredients:

1 head puntarelle, roughly chopped into small pieces
1 ½ cups finely chopped cauliflower
1 lime – juice only
1 orange – juice only
1 lemon – juice only
1 large avocado
2-3 tablespoons of raw hemp seeds
1 pinch of pink salt or to taste
1 pinch of chipotle chili powder or to taste

Directions:

Toss together and enjoy!
