I don’t know about you, but I have a thing for rice. A bad thing. I can’t be around cooked traditional rice because I can’t stop eating it! Then I wind up feeling bloated afterward as my body struggles to digest it. So for me, raw vegan cauliflower rice dishes provide the perfect solution. Finally, I can eat an easy, raw, plant-based meal with textures and flavors that closely mimic traditional rice dishes.

This recipe is a favorite of mine, exploding with deliciously rich & spicy Indian food flavors. One of the things I always loved about cooked Indian food was the layering and complexity of flavors. You don’t have to give up any of that when you go raw. You can have fun with your food and really enjoy it, even more so than before because not only does it taste insanely good, but you’ll also get the benefit of feeling great afterward. Plus, you don’t have to cook anything!

With raw food recipes like this, I get superior nutrition with none of the binge triggers, guilt, weight gain or bloat. Plus, hello, this is so much tastier than traditional cooked rice! That’s the greatest benefit and secret of raw vegan foods – they taste amazing! I just wish I had learned this when I was a teenager, but hey, all my mistakes got me where I am today. My experiences have become my lessons for you and I am here to share them for your benefit.

This dish also meets my fundamental criteria for a successful long-term raw lifestyle: Delicious, nutritious, and FAST! I am all about keeping it simple. If I am hungry, I want to eat NOW, not ten hours later as many raw gourmet meals require. That much prep is just not for me! I’m a very busy, active individual. Speed & flavor are a MUST in my daily diet.

You can enjoy this cauliflower rice by itself, as a side dish, or as a stuffing in wraps. For example, you could spoon some into butter lettuce cups with a little sliced avocado for a hearty and tasty sandwich wrap.

Seasoning Tip: All curry powders are slightly different, as are all raw plants. Taste your recipes as you go. Begin conservatively with spices and adjust all recipes as needed. You can spice this up or keep it mild. It’s all up to you!

Raw Vegan Coconut Curry Cauliflower Rice with Pistachio

Ingredients:

1 small head cauliflower
1 cup raw shelled pistachios
2 green jalapeno peppers, seeded
1 large handful cilantro
1 teaspoon onion powder
2-3 dashes garlic powder
1 teaspoon yellow curry powder
½ teaspoon white pepper
½ teaspoon pink salt or to taste
1-2 tablespoons coconut butter, (this is different than oil; it's a whole food) adjusting to your preferred taste and dietary needs. Omit if desired.

Directions:

Pulse/process ingredients in food processor until small-size rice consistency is achieved. Feel free to double or triple this to bring to a party!
