Baby Greens with Creamy Cilantro Dressing

This dressing is so good you’ll be making it on a regular basis looking for any excuse to eat more greens!

Baby Greens with Creamy Cilantro Dressing

Ingredients:

Salad:

10-15 cups of fresh baby greens of your choice
1 medium tomato, diced
¼ cup fresh cilantro, finely chopped

Dressing:

½ cup raw cashews
3 tablespoons nutritional yeast
3 tablespoons raw hemp seed
Juice from one small orange
1 substantial pinch white pepper
1 large handful fresh cilantro leaves
1 pinch pink salt (omit if you are on salt-free diet)

Directions:

Pulse dressing ingredients except for the cilantro in blender until mixed but not totally smooth. On slow speed, start adding cilantro, pulsing until blended into small particles. You want to be able to see specks of cilantro versus a solid green soupy consistency.

Pour dressing atop baby greens, top with diced tomato and chopped cilantro.
