Blueberry Cream Raw Vegan Smoothie

If you like raw vegan ice creams and dairy-free milkshakes, lucuma powder is your friend. Lucuma powder is a dried fruit low on the glycemic index. It adds a mellow, sweet, creamy flavor and texture to raw food desserts and it’s simply delightful in this blueberry milkshake. Lucuma contains beta carotene, iron, zinc, vitamin B3, calcium, and protein. It may support cardiovascular health and healthy skin, too. I just love what it does for vegan creams and frozen desserts. When it’s mixed with coconut butter, too, O-M-G.

Coconut butter is blended whole mature coconut, unlike coconut oil which is just the fat separated from the fiber. If you’ve never tried coconut butter, you are in for a treat. Just be warned, it’s totally possible to find yourself standing in the kitchen, jar in hand, eating it by the spoonful. Ummmm, a good friend told me so. No, really.

And can we talk about blueberries for a moment? Rich in antioxidants, blueberries are also a great source of fiber and healthy carbohydrates. Their taste can’t be beat. I can’t fathom why anyone would destroy blueberries by cooking them in a pie with processed sugars, dairy, and refined flours. Kills the magic! Blueberry Cream Raw Vegan Smoothie

Ingredients:

4 frozen ripe bananas broken into small chunks
1 dry pint of fresh organic blueberries (around 2 cups)
2 tbsp lucuma powder
2 tbsp coconut butter
2 tsp vanilla bean powder
1 cup of water

Directions:

In a high-speed blender or food processor fitted with "S" blade, blend ingredients until smooth.
Store your smoothies extra in glass canning jars with plastic lids.
