Butter Lettuce Salad with Curry Basil Dressing

The key to getting your greens in each day is to find delicious ways to do so. This recipe uses my super yummy curry basil dressing, which you can make and store for a few days in advance.

Butter Lettuce Salad with Curry Basil Dressing

Ingredients:

2 heads of butter lettuce, washed and torn into chunks

½ avocado

Curry Basil Dressing Ingredients:

Juice of ½ orange (just under ½ cup)

5-6 fresh basil leaves

½ tsp yellow curry powder

1 pinch white pepper

Directions:

Mince all but one of the basil leaves. Set the last one aside.

In a bowl, whisk together orange juice, curry powder, pepper, and minced basil. Julienne (roll up then slice into very thin strips) the remaining basil leaf and sprinkle atop your salad. Toss with butter lettuce and top with sliced avocado.
