Butter Lettuce Salad with Red Pepper Citrus Dressing

A thing of the past. Don’t be put off by the word “salad,” either, because a salad is limited only by your own imagination. Think of it as a mixture of many beautiful, delicious, nutritious foods tossed together with an endless possibility of sauces and dressings. Suddenly, the concept of eating big salads will seem to OPEN new culinary doors for you!
Here’s a quick, easy, and oh-so-good salad for you to try:

Butter Lettuce Salad with Red Pepper Citrus Dressing
Yield: One serving!
Prep Time: 5-7 minutes
Ingredients:
2 heads of butter lettuce, washed & torn into pieces
1 grated raw zucchini
1 large handful of cilantro, minced
1 large red bell pepper
Juice of one medium orange
Juice of 1/2 lime
1 pinch Himalayan pink salt (optional)
Black pepper to taste (optional)
1 Avocado
Directions:
In a large bowl, lightly toss the lettuce, zucchini and cilantro. Set aside. Place pepper, orange juice, lime juice, and salt in a high-speed blender, then blend until pureed. Drizzle atop salad then toss and top with sliced avocado and black pepper.
