Butter Lettuce Wraps with Chipotle Avocado Spread
Ingredients:
½-1 head butter lettuce, use the largest leaves
1 medium zucchini, julienned
1 medium red bell pepper (or baby bell peppers) julienned
1 cup mushrooms of your liking, thinly sliced
1 large avocado
Juice of ½ lemon
½ teaspoon chipotle chili powder or to taste
Pink salt to taste
Directions:
Mash avocado, chipotle chili powder, lemon juice, and salt into guacamole spread consistency. Spread on individual butter lettuce leaves then top with zucchini, peppers, and sliced mushroom. Roll into small wrap and enjoy one after the other!
