Cheesy Jalapeno Dip with Veggie Crudités

That way, when the munchies strike or you’re attending a social gathering, you’ll be armed with healthy, delicious veggies & dips or delectable salads for you to eat and that no one will be able to resist. Note: There are so many varieties of peppers in season right now, so feel free to experiment with substitutions, or, if you don’t have any peppers handy, use chipotle chili powder.

Cheesy Jalapeno Dip with Veggie Crudités

Ingredients:

1 large avocado
2 small red heirloom or other ripe tomatoes (about 1 cup)
3 seeded fresh jalapeno peppers (red or green, depending on your preference)
2 dates, pits removed
¼ cup nutritional yeast
2 tablespoons fresh orange juice
¼ cup hemp seeds
pinch of pink salt or to taste (optional)

Directions:

Blend in Vitamix or other blender until creamy and totally smooth. Use spatula to scrape out into bowl, then top with some additional hemp seeds. Serve with your favorite sliced raw veggies! Pictured: Raw zucchini slices.
