Cilantro Ginger Sweet and Spicy Salad

Have you ever eaten avocado egg rolls at the Cheesecake Factory? This dish has a flavor profile a little bit similar to that dipping sauce. Perfect blend of sweet and spicy: The sweet crunch of yellow apple with hearty purple carrot, fresh cilantro, and spicy ginger with jalapeno.

Feel free to triple or quadruple this recipe for a refreshingly delicious salad you can bring to holiday gatherings, parties, etc. It is not only tasty, but also visually stunning. Makes a great main dish or a lovely side accompaniment.

NOTE: There is NO SALT in this recipe. It truly isn’t needed; the flavors stand up on their own. Try to get used to the idea that salt isn’t necessary in everything you eat. View it as an option but not a requirement.

Cilantro Ginger Sweet and Spicy Salad

Ingredients:

1 large purple carrot, grated (about one cup)
2 medium tomatoes, diced (about one cup)
1 large yellow apple, peeled and diced
2 tablespoons lemon juice
1 large handful of fresh cilantro, chopped
1 green jalapeno pepper, minced
1 teaspoon grated ginger
3 tablespoons of hemp seed

Directions:

Toss all ingredients together repeatedly until flavors have blended.
