Colorful Zucchini Pasta! Raw Foods on a Budget

I love simple, fresh ingredients. Raw food is not a complicated way to eat. It’s actually the fastest, most delicious way I’ve ever eaten. I just wish someone had taught me the lifestyle when I first went vegan. It would have saved me many years of trial and big errors!

This is a great raw vegan meal for 1-2 people. There is no wrong way to prepare this. Spiralize raw zucchini with this awesome kitchen tool and then move on to the rest. Chop up everything as you see fit, or do it the way I did for this presentation.

A note on raw foods in general:

Don’t get uptight about this lifestyle. The whole point of a raw vegan lifestyle is to liberate you in so many ways, and that includes liberating you from spending excessive time chained in the kitchen! I am a proud raw vegan mom of two incredible, active boys and I am always on the go. You don’t even want to know how much time I spent in the car today, seriously. So I need my raw food diet to work in the real world, where we have real responsibilities and sometimes chaotic days. Raw foods should not only taste great, but also be easy to prepare and something you can do quickly when you’re short on time. I am also a big fan of using everyday ingredients found in most grocery stores. All plants are “super foods.” Don’t buy into marketing hype and spend thousands on gimmicks.

You might notice that this recipe is also oil-free and salt-free. Some of my raw food recipes do contain salt and oil, but the vast majority do not. This is because I gave up eating salt and oil years ago and have not really looked back. It wasn’t the easiest part of going raw, to be honest. But it is what works for me. You need to do what works for you. It’s a process, and yours is unique to you. Accept yourself exactly as you are today, then set progressive, attainable goals over time.

In addition to the beautiful, fresh fruits and vegetables in this dish, raw hemp seed provides whole-food plant-based healthy fat containing omega-3 fatty acids. It is also a great source of vegan protein and fiber. Plus, they’re just plain delicious! Almost walnut-like in flavor. I don’t often eat raw nuts anymore and much prefer seeds like hemp.

Colorful Zucchini Pasta! Raw Foods on a Budget

Yield: 1-2 servings

Prep Time: 5-10 minutes

Ingredients:

2-3 small zucchini, spiralized with a spiral slicer
1 cup cilantro
1 cup chopped, julienned or shredded carrots
1 cup diced celery
2 tbsp lemon Juice
2 tbsp hemp Seeds
2 julienned pears
2 cups chopped purple Cabbage

Directions:

Toss together and enjoy!
