Creamy Coconut Blueberry Smoothie


Reason number 101 why smoothies are one of the BEST ways to obtain energy and nutrition during your busy day—They’re simply delicious!

You can hide so much in a smoothie that you might not otherwise have the time or inclination to eat raw. One of my trick ingredients is this smoothie is zucchini. Yup, you read that right. Zucchini is a neutral flavor that can be adapted to meet your needs. Here, it amplifies the creaminess of the coconut without having to add overt fats to the recipe, and you’d never know it was in there. This smoothie recipe is a crowd-pleaser, too; the flavor will knock your friends’ socks off!


Creamy Coconut Blueberry Smoothie


1 large handful of lacinato kale, stems removed
1 medium zucchini chopped in large chunks
1 cup water
1 young thai coconut, water & meat
4 frozen bananas broken into chunks
1 ½ cups frozen blueberries
10 medjool dates, pits removed


Placing your greens and water at the bottom, blend all ingredients in your Vitamix or other high-speed blender. If your blender isn’t very powerful, blend slowly and in stages until creamy consistency is achieved. Store in airtight containers for a meal that will last at least half your day, if not longer! I prefer glass jars with plastic lids, as pictured.
