Crunchy Apple Almond Salad

WOW, these simple flavors play so well together, light, refreshing, crunchy and delicious. If you don’t care for almonds, try pecans or your preferred variety of nuts.

This salad uses ingredients found year-round in any market, making it a go-to staple for quick and satisfying meals. It’s filling and will give you long-lasting energy. Great to bring to work for lunch!

Notice there is no salt or oil in this recipe. Not needed!

TIP: Ideally, your almonds will have been soaked beforehand. A good habit to develop is to keep soaked nuts in your fridge so you have them handy to grab. They keep for about a week. To soak, place in bowl and cover with cold water, then let them sit overnight (about 8 hours), then rinse and strain.

Crunchy Apple Almond Salad

Ingredients:

1 large carrot
1 large apple
2 celery stalks
1 handful fresh cilantro
juice of half an orange (about 3 tablespoons)
¼ cup chopped raw almonds

Directions:

Finely chop all ingredients, toss together in a large bowl, serve!
