Curry Basil Dressing

This light, playful dressing blends sweet citrus with yellow curry and fresh savory basil. Notice that it is both oil and salt-free! I want you to play with dressings like these and develop some oil and salt-free favorites.


Curry Basil Dressing


Juice of ½ orange (just under ½ cup)

5-6 fresh basil leaves

½ tsp yellow curry powder

1 pinch white pepper


Mince all but one of the basil leaves. Set the last one aside.

In a bowl, whisk together orange juice, curry powder, pepper, and minced basil. Toss with your favorite salad. Two heads of butter lettuce work very well here. Julienne (roll up then slice into very thin strips) the remaining basil leaf and sprinkle atop your salad.
