Easy Mac Nut Nacho Cheeze

This recipe is so quick, no soaking of the macadamia nuts beforehand is required! If you can’t find raw macadamia nuts in your local market, the good news is you can simply order them online. I do this with several raw food ingredients and also enjoy some savings to my budget because the prices from various websites can be better than picking them up at certain large chain stores.

When I first went raw, I remember attending raw food conferences and meetups where people would lament about how much time it took to prepare raw vegan food. This scared me because I worried that much of my future life would be spent soaking, sprouting, dehydrating, and just generally spending many hours in the kitchen to make one small recipe. Thank goodness this was far from true!

Most raw vegan recipes are fast and easy, especially the ones I create. I am a busy mom and entrepreneur. My time needs to be spent raising my kids, running a business, and exercising, not calculating the exact moment when I need to complete step number 32-B in a complicated raw gourmet recipe. Yes, sometimes that kind of food is fun and can be totally suitable for a holiday gathering, special event, or just to satisfy your craving for something. But most raw food in your daily lives should be quick. Our food fuels us to allow us to get on with life and enjoy doing what we want to do. Preparing our food should not take over our lives.

So back to this Easy Macadamia Nut Nacho Cheeze recipe. (Note: At the time of creating this recipe, I called it a “cheeze” because that was what I saw many vegans doing. Today, years later, I find that type of naming protocol to be utterly silly and would just call this “cheese.”)

You can play with this recipe adding other seasonings if you like, such as onion, garlic, or folding in some minced cilantro. Use it as a spread in collard wraps, butter lettuce cups, a dip for veggies, or thin it out with additional water or nut milk for a creamy and spicy salad dressing.

Easy Mac Nut Nacho Cheeze

Ingredients:

1 cup raw macadamia nuts

¼ cup water, added slowly and as needed

½ tsp probiotic powder (optional)

¼ tsp salt or to taste

2 tablespoons lemon juice

2 tablespoons nutritional yeast

1/3 of a small red bell pepper

1 teaspoon chipotle chili powder

Directions:

Blend to creamy consistency in high-speed blender. Do not over blend; just go until the cheese is uniformly smooth.
