Easy Raw Vegan Meal Ideas for 1-2 People: Butter Lettuce Hearts
This simple raw food recipe has no wrong way of doing it. Ahhh, exhale. No complicated directions. Raw foods should be fun, not a headache.
Prepare as much as you like! I typically eat two heads of lettuce in one meal.
And if you don’t have sprouts, you can always top with grated carrot, diced fresh herbs, thinly-sliced bell pepper, or grated zucchini. Or use all those ingredients! You can also use other types of lettuce, though butter lettuce hearts are my favorite for both texture and flavor in this recipe.

Easy Raw Vegan Meal Ideas for 1-2 People: Butter Lettuce Hearts
Ingredients:
1-2 heads of Butter or Bibb lettuce
Sprouts of your choosing
Mayo Dip, plain or seasoned as you wish
Directions:
Remove large outer leaves from lettuce heads and save for salad or lettuce cups/wraps later. Slice heart of lettuce head in half. Top with spreads and sprouts, or whatever else you like. Enjoy!
