Fast and Easy Raw Food Meals: Zucchini Rolls with Creamy Chipotle Dipping Sauce

Quick, easy and delicious! That’s my style. And I’ve got you covered when it comes to teaching you a totally doable, practical raw food diet. I’m going to show you raw food that works for life, not just a brief cleanse or temporary diet.
You’re busy. Your time is rarely your own. You have to get to work, or to school, or both. You might have kids (or kids who play sports – ahhhh!) or you might be a caregiver in some other capacity. Maybe you’re building your own business, or trying to get fit spending hours in the gym. Or maybe you just dislike creating complicated meals or following lengthy, time-consuming recipes.
Bottom line: You don’t want to spend hours in the kitchen. I get it. And most days, I live it!
You don’t want to have to sprout, and soak, and dehydrate, and go through a zillion steps just to enjoy a raw food meal.
You’re hungry RIGHT NOW.
You need to eat RIGHT NOW.
You’ve probably got to get back to whatever it was you were doing before you realized you were hungry, so you need FAST FOOD.
I love quick veggie-based wraps & rolls for this very reason. They allow you to use what you have in the kitchen including everyday, affordable ingredients that you can find in just about any supermarket.
Feel free to substitute with whatever veggies and herbs you have available, too.
You can’t really go wrong with my style of raw food recipes because they are easily adaptable.
Gettin’ Saucy
Oh, and this dipping sauce. Can we talk about the sauce? Thick, rich, creamy, cheesy and spicy. If you love nacho cheese, you will love creamy vegan dips made with chipotle chili powder.
As a general rule, I want you to practice creating sauces you love! I’m talking stomp-your-foot love. This will really help you eat more raw vegetables because you will have some awesome go-to dips and dressings you can make on the spot or in advance.
This dipping sauce will stay fresh in your fridge for about a week, so feel free to make a bunch of it and then use it throughout the week if you want to snack on raw vegetables or make more wraps or rolls.

Fast and Easy Raw Food Meals: Zucchini Rolls with Creamy Chipotle Dipping Sauce
Ingredients:
Zucchini Rolls:
4-5 small zucchini
1 avocado
1 bell pepper (red, yellow, or any kind you like!)
2 carrots, shredded
2-3 stalks of celery
1-2 tomatoes
1 bunch of cilantro
Dipping Sauce:
1/2 red bell pepper
1/2 tsp chipotle chili powder
1/4 tsp garlic powder
1/3 cup hemp seeds
2 tbsp lemon juice
1 tbsp lime juice
1/4 cup nutritional yeast
1/4 tsp onion powder
1 pinch pink salt or to taste
Directions:
Slice zucchini into strips on a mandolin slicer. Use a safety glove to protect your hand. Set aside strips. Chop cilantro. Julienne tomatoes, celery, and peppers. Slice up avocado (no wrong way here - be messy, imperfect, and have fun!) Now place some filling ingredients on one end of each zucchini strip, and, you guessed it, roll it up! You can set the finished rolls on a platter until you are ready to dip them into the sauce, as pictured above. Or, if you're making this for a group, you can let everyone create their own rolls and just present all the fillings in little bowls. It's up to you and your individual needs and preferences.
Now for the sauce: Blend dipping sauce ingredients in a blender until smooth. Taste it! Then adjust spices and citrus to your liking if needed.
