I LOVE the kale and blueberry combo. I always joke that it gives me super powers. I really notice when I don’t get kale into my raw food diet on a regular basis!

Kale actually packs more vitamin C than blueberries, believe it or not. In fact, if you add two packed cups of kale to your simple green smoothies, your vitamin C will be off the charts. And that’s a great thing for the body’s immune system. A raw vegan diet rich with antioxidants also helps make the aging process a lot less harsh, as it supports collagen formation. Vitamin C also helps the body absorb iron.

Kale is also a fantastic source of calcium, making it a wonderful leafy green to include in one’s diet. But not everyone enjoys chewing up kale. It’s a little cabbage-like in flavor and tougher than lettuce. So blending it into a delicious, fast, easy green smoothie is a practical way to start getting this plant into your diet on a regular basis.

Blueberries mixed with kale help balance the flavor. When fresh kale is blended with blueberries and bananas, a perfect balance of sweetness with tartness and earthy greens is achieved. You can start with less kale at first, building up more as time progresses.

This smoothie can be made with or without the addition of raw vegan protein powder. Kale Blueberry Smoothie

Ingredients:

10 large curly kale leaves, stems removed
3 frozen bananas
2 cups of frozen blueberries
2 scoops Sunwarrior Classic Plus raw vegan protein in chocolate or vanilla
2 Tbsp raw cacao nibs
3-4 cups of water or as needed

Directions:

Place greens and water at the bottom of your blender container. Add protein powder, then remaining ingredients. Blend until desired consistency is achieved, adding more water if needed. Store in glass jars with plastic lids for best freshness. I prefer drinking this smoothie within 24 hours of making it.
