Kid-Friendly Raw Food for Summer! Coconut Cream Pie Milkshake

Just like my super quick and easy strawberry ice cream recipe, this milkshake recipe is great for children and adults alike. It is so creamy, smooth, cold and sweet! You will never miss the heavy feeling of eating dairy products again. Plus, there is NO sugar in this except for the natural sugars in fruit, which are balanced perfectly with nature’s level of fiber, vitamins, and water.

Coconut Cream Pie Milkshake

Yield: 2-3 servings

Ingredients:

4 cups frozen banana chunks
Meat from 1 young Thai coconut (around ¾ cup)
¼- ½ cup of water from the coconut, use as needed, starting conservatively!
2 teaspoons vanilla bean powder (or organic vanilla extract if powder unavailable)

Sprinkle grated dried coconut on top if desired.

Directions:

Blend all ingredients in your Vitamix or other high-speed blender; you’ll need to go slowly at first and possibly use your tamper or scrape down the container (only scrape down when machine is turned off). Blend until you've achieved a thick milkshake texture. Serve immediately.
