Mache Salad

Have you ever tried mache lettuce? It is a delicate French lettuce with a nutty, sweet flavor. Terrific in salads. I encourage you to branch out and try every leafy green that you can. Your body will thank you! Each one has a different nutritional profile, so it’s beneficial to rotate your greens.

Here’s a recipe for a yummy mache salad. If you don’t have mache handy, try butter lettuce. Note: If you MUST have oil, feel free to add a dash of extra virgin olive oil to the salad topping.

Mache Salad with Apple, Avocado, & Jalapeno

Ingredients:

1 green jalapeno
1 medium apple
1 medium carrot
Juice of half an orange (about 3 tablespoons)
3 sweet peppers or one large bell pepper
1 pinch of pink salt or to taste
1 handful of fresh basil leaves, chopped
1 large, firm avocado, cubed
3 tablespoons hemp seed

5-8 cups mache lettuce
1 handful of microgreens of your choosing

Directions:

Using a protective glove, slice all peppers, apple, and carrot on mandolin slicer or julienne them by hand. Place in bowl. Add orange juice, salt, avocado, hemp seed, and chopped basil. Toss, taste, and adjust salt if needed. Prepare plates of mache lettuce & microgreens then gently top with apple salad mixture.

Serves 1-2 people depending on how hungry you are!
