Anyone who visits my home and doubts the power of raw foods winds up getting to try some of my recipes, and this is the kind of meal where people will initially say, “Oh, I can’t get full off of vegetables.” Then once they are done, they are so full that the mere idea of heading out to grab a pizza or burritos afterward is preposterous.

They are amazed that raw vegan food not only tastes great, but also shuts off their appetite leaving them satisfied and energized. That magical, liberating effect is how I lost oodles of weight following two complicated pregnancies that left me feeling lethargic and hopeless, wondering if I’d ever get those pounds off.

Yes, sometimes you can really go gourmet with the fancy dehydrated raw food recipes. But we all live fast-paced lives these days and don’t always have time for that. Likewise, fresh water-rich fruits and vegetables give you the greatest nutritional bang for your buck while filling you up.

Easy Mac Nut Nacho Cheeze


1 cup raw macadamia nuts
¼ cup water, added slowly and as needed
½ tsp probiotic powder (optional)
¼ tsp salt or to taste
2 tablespoons lemon juice
2 tablespoons nutritional yeast
1/3 of a small red bell pepper
1 teaspoon chipotle chili powder

Remaining Ingredients for Assembling Sliders:

2-3 ripe tomatoes
1 handful minced cilantro
3 green onions, thinly sliced
1 handful alfalfa or other sprouts



Blend Easy Mac Nut Nacho Cheeze ingredients to creamy consistency in high-speed blender like this awesome refurbished model from Blendtec. Do not over blend; just go until the cheese is uniformly smooth.  Slice tomatoes, then top with some of the cheeze, minced cilantro, chopped green onion, and sprouts of your liking.
