Pomegranate Salad with Zucchini and Apples
This is a fast, easy recipe you can make & build upon every day. You can also make it in advance, throw it into a storage container and bring it with you to work, school or wherever else you need fast, healthy food. I love pomegranate during the holiday season because it’s not only delicious and filled with antioxidants, but it’s also stunningly beautiful, making it a wonderful visual when serving to guests.
Recipes like these are VERY simple to make, packed with nutrition, and delicious. They are also low in fat and fit into what’s called the “80/10/10” version of a raw food diet. What’s that, you ask? Developed by Douglas N. Graham, it’s when you eat 80 percent carbs, 10 percent protein, and 10 percent fat.
This salad is a good example of 80/10/10. It contains no overt or high-fat foods such as oils, nuts, or seeds. It also happens to be free of added salt. I don’t follow 80/10/10 strictly but do enjoy delving into chapters of it throughout each year of my life. I don’t believe that everyone must follow 80/10/10 all the time; succeeding on raw foods is not a one-size-fits-all methodology! That said, I encourage you to incorporate such recipes into your own customized raw food lifestyle. They’re wonderful for energy, mental clarity, and weight loss.

Pomegranate Salad with Zucchini and Apples
Ingredients:
1 pomegranate
2 small zucchini, diced
3 tablespoons minced fresh cilantro
1 large apple, diced
1 ½ cups sliced golden cherry tomatoes
Directions:
Remove seeds from pomegranate. This is tricky - you can cut the pomegranate in half and then spread apart the spongy inner membrane to release them. Toss all ingredients together and enjoy!
