Raw, Vegan, Dairy-Free, Creamy Broccoli Cheeze Jalapeno Soup!
“But I don’t like raw broccoli,” is often what I hear when people express their concerns about going raw. Truth? I’m not really the biggest fan of gnawing on chunks of raw broccoli, either. It’s the last of my worries, though, because I don’t ever need to do that to succeed on raw foods. Using raw broccoli in a soup is an easy, delicious way to enjoy all its nutritional benefits. This rich, filling soup can also be prepared warm by using your blender—Just keep blending until the motor’s heat warms it up! I love my Vitamix for this very reason. As the weather cools down, if I ever want a hot soup or sauce, it’s seconds away.
2 cups (about one head) raw broccoli florets
3 green jalapeno peppers, seeded
1/3 cup + 2 tablespoons nutritional yeast
1/3 cup raw cashews
1 avocado
1 teaspoon onion powder
½ teaspoon garlic powder
¼ cup fresh cilantro leaves
½ teaspoon chipotle chili powder (or to taste, start with less!)
½ teaspoon pink salt or to taste
2 cups water, as needed
Blend in Vitamix or other high-power blender until totally creamy, as pictured. Adjust water and seasonings as desired to achieve your preferred thickness and flavor.
