Raw Vegan Holiday Recipes: Mashed Potatoes
Ready for more raw vegan holiday recipes? Thanksgiving can be a challenging time for people transitioning to a raw vegan or just a vegan diet. Raw cauliflower is a simple, nutritious variation on traditional mashed potato recipes.
Cauliflower is also a budget-friendly food, giving you a big nutritional return on your dollar. Did you know that just one small head of raw cauliflower contains about 450% of your daily Vitamin C? Wow!
For this recipe, I gave these creamy mashed “potatoes” a cheesy Italian flavor.
Sprinkling fresh chopped chives on top provided a burst of bright color along with a mild onion flavor that complimented the dish perfectly.
You can enjoy this dish as a meal in itself, or serve it as a side. It’s fast and easy to make.

Raw Vegan Mashed Potatoes

Ingredients:
3 cups chopped raw cauliflower
1/2 cup raw cashews (soaked in cold water 4-6 hours beforehand if possible)
1/4 cup nutritional yeast
1 pinch pink salt (optional)
2 tbsp Italian seasoning
1/4 cup fresh chives
Directions:
Wash and chop up cauliflower, place into food processor fitted with "S" blade. Add all remaining ingredients except for the chives. Pulse food processor until the mixture gets going, stopping the machine and scraping down as needed. If your ingredients are too dry, you may drizzle in tiny amounts of water one tablespoon at a time to get it really creamy. Taste mixture to see if you would like to add salt or not. I rarely use salt but do offer it as an option. When a mashed potato consistency is achieved, spoon it into a serving bowl and top with chives. You may also choose to stir in the chives by hand. There is no wrong way. Enjoy!
