Raw Vegan Mayonnaise, Dip, and Dressing Base

This super simple vegan mayonnaise recipe can be used on its own or modified to form the basis of salad dressings and dips including garlic aioli, ranch, or herb dip. The possibilities are endless. You can blend in a garlic clove, onion, dried or fresh herbs, citrus, peppers, you name it!

Once you learn some basic raw food recipes, you can build on them and expand what you eat. Think about it: Traditional cooked non-vegan food is basically formed from the same repeated ingredients prepared in new and interesting ways. The same methodology applies to learning raw foods. The difference is that on a raw food diet you will be using nuts, seeds, and avocados for your creamy dishes instead of dairy products, for example.

Raw Vegan Mayonnaise & Dip/Dressing Base

Ingredients:

½ cup raw cashews
1 tablespoon apple cider vinegar
1 tablespoon extra virgin olive oil
1 pinch of pink salt to taste

Directions:

Blend in high-speed blender. Depending on the speed and power of your machine, you might need to drizzle in TINY bits of water to help thin the mayonnaise to achieve the right consistency. You can store this for up to a week in the refrigerator.
