Raw vegan noodles are not limited to zucchini! One of my favorite kinds of raw food noodles is made with English cucumbers. They are lower in seeds and water than traditional cucumbers, making them perfect for spiralizing into fresh, delightfully crunchy noodles. The bulk of a successful long-term raw food diet is enjoying meals that are not only nutritionally robust but also FAST and EASY to make while being delicious and satisfying. Enjoy this yummy salad and the light feeling it gives you! NOTE: I don’t add salt to my meals anymore, but if you like a little dash of salt, feel free to add a tiny pinch of pink salt to this recipe.

Simple Raw Food Meals: Cucumber Noodle Salad

Ingredients:

2 english cucumbers, peeled and spiralized with a spiral slicer.
1 diced tomato
2 stalks of celery chopped or diced
2 tablespoons of hemp seed
Juice from one lemon
1/2 red bell pepper, diced

Directions:

Toss all ingredients together and enjoy!
