Raw Vegan Spaghetti Zoodles with Red Pepper Cream Sauce

Enjoy a huge portion of rich creamy raw food vegan pasta with savory red pepper cream sauce. Never worry about noodle portions again! It’s nearly impossible to overeat pasta when it is made with fresh raw zucchini. Make noodles easily with a spiralizer, an inexpensive, highly useful tool I strongly encourage all raw food enthusiasts to obtain.

Raw Vegan Spaghetti Zoodles with Red Pepper Cream Sauce

Ingredients:

3 med-lg size raw zucchini peeled and spiralized into noodles

Sauce:
1 red bell pepper, seeded
1 jalapeno pepper, seeded
1/3 cup soaked raw cashews
1 pinch pink salt or to taste
1/2 cup nutritional yeast
Cores from the spiralized zucchini

Topping:
1 tomato, diced

Directions:

Turn raw zucchini into noodles by chopping off the ends, attaching them to your spiralizer, and turning the handle. Have a large bowl or plate ready to catch your noodles. Once done, set aside.

Blend sauce in a blender until smooth and creamy. Pour over noodles, toss and enjoy! May be topped with diced tomato, as pictured.
