Fast Food Life! That’s how I roll. And wrap. I have no patience. I want things delicious, nutritious, and RIGHT NOW. I bet you can relate.
Ever tried a collard wrap? Super easy. Great way to eat fresh veggies. They’re filling, hearty, satisfying, and very diverse in terms of flavor combinations. Think of raw collard leaves as the tortilla of the raw food world. You can make just about anything with collard leaves. Don’t be scared of them; I know they might seem intimidating if this is your first introduction. It actually took me a few years of being raw vegan before I would eat them. Boy, had I been missing out! They have a lovely mild flavor and I felt amazing after fueling my body with them.
Collard leaves are also nutritional rockstars! They help reduce unhealthy cholesterol, are low in calories, contain protein, and are rich in vitamins A and C.
Just wash & remove stems from some big organic collard leaves, then roll with a veggie-based filling of your choice.
For example, you can roll them up with:
Cauliflower
Carrots
Cilantro
Tomato
Celery
Nutritional Yeast
Lemon Juice
Avocado
Shredded Zucchini
Hemp Seed
Black Pepper
The finished product is easy to eat, like a mini burrito. The leaves are strong, so they won’t leak juice, either. You can also create any variety of sauces or dips you like, and dip your wraps into them for extra flavor. It’s up to you!
Get in your kitchen and play with what’s available! Have fun and don’t try to be perfect.
And if you dislike a particular vegetable raw, such as cauliflower, steam it lightly! Here’s a secret—Almost every long-term, successful, science-based raw foodist I know will occasionally enjoy a steamed veggie or two. I would rather see people do that than over-consume raw fats day after day, eventually burning out on raw foods.
