Stop & Taste

As you’re making the recipe, I want you to stop and TASTE the mousse, then feel confident in making any adjustments you want. Some people like their raw vegan chocolate desserts to be more chocolatey, while others like the chocolate flavor more mellow and subtle. Likewise, some people like sweeter desserts, so you can add more dates, or more cacao to your liking. Be bold and make it your way! My raw food recipes are strong foundations upon which you can build your ultimate flavor experience and arsenal of go-to recipes.

Yield: 2-6 servings

For the mousse:

2 cups of avocado
4 Tablespoons of raw cacao powder
1 packed cup of dates, pitted
1 Tablespoon of vanilla bean powder or liquid

For the optional chocolate pecan crumble topping:

1/3 cup of raw cacao nibs
½ cup of raw pecans
½ cup of dates, pitted

Blend mousse ingredients in a high-powered blender until a thick creamy texture is achieved. Do not over-blend, as that will cause fats to separate and the texture can be ruined. Just watch the mixture and take your time the first time until you get the hang of blending avocado-based recipes. Spoon mousse into serving bowls of your choosing. Set aside.

In a blender or mini-food processor bowl, pulse/blend the chocolate pecan crumble topping ingredients until a graham cracker crust consistency is achieved. Sprinkle on top of each mousse cup. Enjoy!

Serves 2-6 people depending on how large of a dessert you want this to be.
